For the first step in our Bifana recipe you will want to get out a medium mixing bowl. Now combine the diced fresh garlic cloves, the course grain salt and your favorite table wine. Mix the ingredients thoroughly together. Once the mix has been prepared add in the thin slices of pork tenderloin. The meat will now need to marinate in this mixture for about 2 full hours. Once the marinating process has been completed, place the extra virgin olive oil in a frying skillet, and heat to medium high. Add in what is left of the marinade, fresh bay leaves, African Birdseye chili and vegetable or chicken stock. Heat until it simmers.
